It was Greeks who showed at Sicilians their mania for ricotta and olives, the Phoenicians their passion for spices, such as cinnamon and saffron, Arabs, came with oranges, sesame, raisins and pine nuts and almond paste, which – ironically – later became a specialty of nunneries
At last, it was the Angevins who showed at Sicilians how to cook and taste garlic, but it wasn’t as soon appreciated by the people.All these flavours have been blended into dishes that mix different traditions, with amazing results.
